With its sheer number of snacks and dishes, it's hard to grasp Northern Thai cuisine. Top that with the language barrier and it's easy to see why most farang stick to pad Thai from the tourist markets. Fear not. Kick things off in the freshest market in the city. Here, you'll indulge in 20 different tastes. Yep, you heard that right. 20 things. While gobbling these morsels, you'll learn about their origins and how they're made. Afterwards, you'll be whisked away to try the best bowl of Chiang Mai's famous khao soi. Thick, silky coconut curry topped with crispy noodles, roasted chilli paste and pickled greens. There are few times in your life that you will taste something truly awesome. This is one of them.

It doesn't end there though. We know a hidden little barbeque hut where you'll tuck into mouth-watering grilled chicken Thai-style. Watch your spatchcocked beauty sizzle over charcoal before being served with zingy papaya salad and spicy sauce. Finish at a tiny ice cream joint that's been churning out the good stuff for almost 40 years. You can pick any flavour, but you're in Thailand, we'll be disappointed if you stick to vanilla.
